Spicy steak burgers


1. 25g bread, weighed without crusts
2. 500g lean steak mince
3. 1 shallot, finely chopped
4. 1 clove garlic, crushed (optional)
5. 4tsp Worcestershire sauce
6. 1 red chilli, deseeded and finely chopped
7. 1 level tsp Dijon mustard
8. 1 egg yolk
9. 4 burger buns
10. Lettuce leaves
11. 1 beef tomato, sliced
12. 4tbsp Asda Extra Special Tomato and Chilli Chutney
13. � red onion, finely sliced


1. Whizz the bread in a processor or blender to make crumbs. Put in a bowl with the mince, shallot, garlic (if using), Worcestershire sauce, chilli, mustard and egg yolk. Season.
2. Mix together with your hands, then shape into 4 burgers. Put on a tray lined with clingfilm and cover with more clingfilm. Refrigerate for at least 30 minutes or until ready to barbecue.
3. Barbecue for 15 minutes, turning once. Don't press them as they cook or the juices will run out.
4. Slice the buns in half and barbecue cut-side down for a few seconds to lightly toast. Fill with the lettuce, tomato, burger, chutney and onion.

Tips for Leftovers

1. Whenever you have bread that's starting to go stale, whizz it into breadcrumbs and freeze them, so you always have a handy supply.
2. Keep the raw burgers in the fridge and only barbecue as many as you need. Any burgers that are not used can be frozen and cooked another day.
